Brew guides

The recipes we use at the roastery. Choose how many cups you're making and the amounts follow.

Coffee
15 g
Water
250 g
Grind
Medium-fine, like table salt
Time
3 to 3½ min
Brew it with Guji
  1. 1

Rinse the filter with hot water and pour that water away.

  2. 2

Add the coffee and pour twice its weight of water just off the boil. Wait 30 seconds while it blooms.

  3. 3

Pour the rest in slow circles, keeping the dripper about half full.

  4. 4

Let it drain. If it runs much past the recipe's time, grind a little coarser next time.

New coffees, first.

One short letter when a harvest lands, about once a month: what's arrived, who grew it and how we'd brew it.
